Korean food BONANZA!!! kkakdugi and buchu jeon

Hello everybody! Last week i made kkakdugi using Maangchi‘s recipe and while browsing her site for recipes i was craving Everything i saw!

I use her recipes for all the korean food that i make, and i normally made her kkakdugi using her complex kimchi recipe because i LOVE raw oyster and this always turned out really well for me. However, i decided to try her simpler recipe this time.

So right now i have five jars of pickles. I feel like i should get an onggi and use it as both home decor and pickling.

Thursday, May 21, 2015 This week, korean chives are on sale at the local korean supermarket so i decided to go ahead and buy two bunches, with the intent of making some yummy pancakes when i got home. Thus after working out with Cassie Ho’s Blogilaties videos today, i went online to Maangchi’s website and found her recipe for korean chive and vegetable pancakes

Go check out Maangchi’s website for the original recipe, i am going to write down my altered version here:

  • 1 cup of flour
  • 1 1/4 cup of water
  • 2 eggs
  • either 1/2 tbs salt (vegetarian version) or 1/2 tbs of salted shrimp
  • 1 bunch of chives, diced real small
  • 1 bunch of bok choy, diced real small
  • 3 carrots, diced real small
  • 3 jalapeños, diced, small if you prefer

Each pancake is about 1 cup of batter/veggie mix

They turned out Beautifully!!! and i ate them with those three types of pickles i made! Yum yum YUM!!!

I Love Cassie Ho’s videos! Last week i signed up for her calender and started working on the beginner’s month. I missed a couple days due to either taking a break or doing Christina Nekiya’s Flexstability. I love how Blogilaties helps strengthen my muscles so that i am less prone to injury than my overly flexible body can be, it is a Great accompaniment to all the physical therapy i do for existing injuries. To everyone who is working out to “lose weight”, it’s always good to Follow Instructions (that the certified fitness instructor gives you), Tone Up, and Eat Healthy. because You Don’t Want To Get Injured.

and before i go, i will show you a pretty picture of a stew i made which did not turn out so well … because i didn’t know that chard would be SO bitter. AND a Delicious jicama salad that i made while waiting for it to finish boiling. So if you ever see jicama on sale at the grocery store (like i did) you can try this out!

  • 1 jicama
  • juice from 1 lemon, or more if you want more sour lemony goodness
  • chili pepper & cayenne pepper to taste
