One of my favorite things to do with left over rice is to Grill it! So I filmed myself making Honey Butter Rice Cookies!
It’s a simple three ingredient snack that can be modified with various add ons and flavorings. For example, in the photo on the left, I topped the rice cookie with some cheese.
- Left over rice
- butter (omit for a vegan version)
- other oil, like coconut oil
First oil your hands so that the rice does not stick, then pick up palm sized chunks of left over rice, roll them into balls and flatten them into patties. Then turn the stove on, add in a mix of butter and oil and grill the rice patties.
The butter flavor is pretty mild.
