This week is Flow week for me! So to celebrate, my subconscious got me to make a bunch of red foods lol.
Thursday(last) night’s dinner:
Kimchi Pancakes with Organic Beet Salad and Roll Ppang
I Love Maangchi’s site so i decided to try this Delicious look Roll Ppang recipe. I baked it a bit too long so it didn’t turn out as soft as preferred … i will make these again and bake it for the amount of time she wrote.
While i waited for the rolls to rise i made the other stuff:
- 2 beets, diced
- 3 cloves of garlic, minced
- half a shallot
- 1/2 a bunch of parsley, minced
- 3 carrots, diced or minced
- 2 tbs of olive oil
- 2 tbs of red wine vinegar
- salt and pepper to taste
- 1 cup of kimchi, cut up
- 1 cup of flour
- 1 cup of water
- 1 egg
- 3 stalks of green onion, minced
- optional tsp of baking powder since chive pancakes don’t use baking soda
the whole thing was DELICIOUS!!!
And today for lunch i blended organic grape fruit peal with water because citrus fruit peals are supposed to hold all the main nutrients and are supposedly more nutritious than the fruit inside. i actually left it in the smoothie machine and need to clean it when i get back. but i Did eat all my rice, garlicky cilantro stir fry and avocado :D
