Blueberry Gentle Lady Cakes

At the end of this post, you will find out why these are called Blueberry Gentle Lady Cakes

Edit from 2/28: i adjusted my original recipe to be more accurate by changing the sugar amount. I had guessed how much brown sugar i’d added and realized what i wrote originally was not accurate. I also added a more comprehensible, alternative version of the recipe.

I haven’t baked in a while so whe I woke up early enough to bake, I immediately made some blueberry muffins. I modified a a recipe from Joy the Baker and made these miniature blueberry muffins!

Blue Berry Muffins!

Ingredients

Original Version

  • 1 cup of organic wheat flour
  • 1 cup of almond flour
  • 1 tbs of rice flour (i originally wanted to try the arrowroot powder i’d recently purchased but i couldn’t find that :/ )
  • 1 tbs baking powder
  • 1/4 or 1 stick of butter
  • 1/4 cup of sunflower seed oil
  • 2 fermented bananas (they were solid black and the only reason why i didn’t have a kitchen full of fruit flies is because i let them sit in the sun on the balcony for the past week instead of keeping them indoors)
  • 1/4 cup of brown sugar
  • 2 tbs coconut sugar (only added this because i was unsure of the sweetness of just the brown sugar and banana)
  • 1 tbs of lime juice (i had hardened and nearly dry lime in the kitchen so i cut it open and fortunately it still had juice)
  • 3 eggs
  • 1 cup of milk
Comprehensible recipe

  • 1 cup of wheat flour
  • 1 cup of almond flour
  • 1 tbs of rice flour
  • 1 tbs baking powder
  • 1/2 cup of neutral vegetable oil
  • 4 Sweet bananas (the kind that’s so spotted and dark brown that you Don’t want to eat it)
  • juice and flesh of 1 small lime
  • 3 eggs
  • 1 cup of milk

Notes:

  • Instead of vegetable oil you can use 1/2 up of butter, which is 2 sticks
  • Instead of 4 bananas you can use 1/2 cup of Packed brown sugar or 1/2 cup of honey
  • Instead of half wheat and half almond you can use 2 cups of wheat flour
  • I have not tried this with All almond or coconut or flax seed flour, when I find a good gluten free version i’l post it :)
Baked at 375 degree Fahrenheit for 20 minutes

The are Soft, mildly sweet, and the top is a little crispy. I have to carefully scoop them out of the cupcake pan with a small spatula because they are rather delicate. I will nickname these Gentle Lady Cakes or 蓝莓 君子糕 .
