oven fried Chicken & overbaked biscuits


decided to use up that chicken i had in the fridge … after several days of vegetable curry lol AND i made a little savory custard/quiche filling with the left over marinade, stir fried the last bit of organic broccoli (sprouts sale mentioned in earlier post) and made some biscuits that got overbaked again -.- i need to stop over baking my biscuits … i made some Perfect ones before and they were SO GOOD yummy and buttery!!!! these were made with cream so um different but hey still Creamy!


i needed to use up my loaf of bread so i manually made bread crumbs, hence some “crumbs” were big and chunky –> burnt black looking parts sticking out. also tried it with three slices of bread and ended up having to add on cooking time toasting ONE more piece of bread for crumbs … lame, should have used up all Four slices since i need to get this loaf eaten up. i don’t like adding on cooking time … it takes time away from all those other things i do … and i was hoping to finish eating at an early enough time to go dance/train some more … but its good that i took the time to write here instead of train … flexibility training was in the plans tonight … will be moved to tomorrow! when i’m using my christmas money to get a massage from a very good massage therapist friend of mines!!!

before i move on to the recipes, i would like to note my inspiration for the chicken is the wonderful neely’s recipe from foodnetwork that i tried Once before and Loved, i also took a look at Ina Garten’s recipe really quick to guess at how much marinade volume i was really using … yeah i eye-balled my written measurements :P i think i’m accurate … i think


Chicken Marinade : for one cut up chicken, or just wings, legs and thighs, i use the breast for other recipes. marinade for 30 min to really soak in the delicious sauce, i think 10 min will be fine also

  • 1 to 1 1/2 cup of whey
  • 1/2 to 3/4 cup of heavy cream
  • or instead of the above two just use 2 cups of buttermilk
    i just happen to have whey from straining kefir
  • 1 tbs of garlic (i used 6 cloves)
  • 2 eggs
  • 1/2 tsp salt
  • 1/2 tbs honey


  • crumbs from 4 slices of bread OR 2 cups of bread crumbs like the neely’s recipe
  • 1/4 c of dry basil
  • 1/2 tsp salt
  • if i had paprika, i would have added it … would have also added cayenne pepper if i wasn’t sharing this with my daughter

instructions on making oven fried chicken

  1. take the chicken out of the marinade and put it in the cry crumbs/crust container, then coat evenly with crumbs and place in whatever you are baking the chicken in
  2. bake at 400 degrees for 45 min

savory custard/quiche filling from left over marinade : pour this in a ceramic dish and bake it for at least 30 min (i placed it in the oven with the chicken :P)

  • use the remaining marinade
  • 1 more egg
  • 3 shitake mushroom
  • 1/2 cup shredded provolone cheese (any mild/medium/semi sharp cheese will be fine here)

stir fried broccoli : dice a bunch of garlic and stir fry the broccoli with that and salt to season

from Beard on Bread i haven’t looked up whether or not i can post other people’s published recipes … so um … just go search for his recipe … its a basic biscuit recipe using heavy cream instead of butter/milk

sleepy now … trying to adjust my sleeping schedule because during holiday break i was staying up Late to do stuff while my daughter was asleep and now she is back in school so i have to sleep and wake earlier! and then in two weeks my classes start …
