Apple Upside Down Cake

this is the Most delicious [mostly] Original cake that i have come up with so far!!!
it is inspired by Joy the Baker‘s Strawberry Upsidedown cake with cardamom

wet batter

  • 2 blackened bananas (i used 3 black mini bananas and 1 regular sized … they were Solid black lol)2/3 c. kefir (i used kefir, milk/sour cream/yogurt are all great substitutes)
  • 1/2 c brown sugar (if you didn’t use kefir then reduce this to 1/4 c, because kefir is Really sour)
  • 1 egg

dry mix

  • 1 c flour (i used whole wheat :) )
  • 1 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1/4 tsp ground cardamom
  • 1 tsp baking soda (if you don’t have acid in the wet batter ir kefir or sour cream/yogurt then use baking powder instead of baking soda)
  • 1/4 tsp salt

  • 2 small apples, pealed and chopped (or one Giant fuji apple)
  • 1/4 c. butter
  • 1-2 tbs brown sugar

Directions:

  1. Preheat oven to 350 Fahrenheit. Mix wet batter thoroughly, then sift the dry batter mix into the wet batter and mix thoroughly
  2. Heat butter in the skillet that you are going to bake (ie a cast iron pan or something that can bake in the oven safely … ceramic inlay cast iron ie dutch oven style is ok … no nonstick pans … Some stainless steel are ok but check with brand suggestions to make sure you aren’t melting your pan into the cake), let the butter brown a bit, then add the apple pieces, let that cook some and then add the brown sugar and let that melt and caramelize
  3. Pour batter into the pan and stick it in the oven. Bake for around 40 min
  4. Take out of the oven and let it rest for 10 minutes before flipping it upside down onto a plate … easy way is to place the plate on top of the pan, then flip the pan + plate combo and use a spatula to brush off topping parts that are stuck on the bottom of the pan

  • i used baking soda instead of baking powder oOoOoO
